Ingredients:

  • 1 teaspoon dried Coffee (Instant Powder)
  • 1 teaspoon Baking Powder (Straight Phosphate, Double Acting)
  • 1 cup sliced Almonds
  • 1 tablespoon Cocoa Powder (Unsweetened)
  • 1 cup Whole Grain Soy Flour
  • 1/2 cup Sucralose Based Sweetener (Sugar Substitute)
  • 3 large Eggs (Whole)
  • 1/2 cup Unsalted Butter Stick
  • 2 ounces or scoops Chocolate Whey Protein

Directions:

  1. Heat oven to 350°F. Spray mini muffin tins with cooking spray.
  2. Process almonds in a food processor in pulses until finely ground. Add soy flour and baking powder; pulse to combine.
  3. In a large bowl, beat butter and sugar substitute with an electric mixer until fluffy, about 2 minutes. Beat in cocoa powder, coffee powder, and 2 oz protein powder. Add eggs one at a time. Mix in almond mixture with a spatula. Divide batter in muffin tins, filling each 2/3 full. Bake 20 minutes, until set.
